This is a super simple quinoa chocolate cake, it’s a delicious gluten free cake without dairy. A 5 Minute Mug Cake that will leave you feeling nourished energised! We find it a great snack, breakfast, or dessert!
I love chocolate, which I try to enjoy in moderation. I am always looking to create a healthy version of foods that allow me to partake of my favourite desserts.
This cake is no exception. It is, in fact, my favourite gluten dessert is quinoa chocolate cake. It is packed with protein, has no “guilty” ingredients in it, and TOTALLY satisfied my sweet tooth and filled me up!
There is no flour in this cake, which makes it a wonderful option for anyone who is gluten free. The quinoa makes this cake moist, light and fluffy. if your not sure what quinoa is, you will be amazed by this tiny seed!
- It’s a nutritional powerhouse loaded with vitamins, minerals, and protein.A single serving of cooked quinoa — approximately 1 cup — contains 8.14 g of protein
- Its not a grain, We cook and eat quinoa like many other grains, but, botanically speaking, it’s a relative of spinach, beets and chard. The part we eat is actually the seed, cooked like rice, which is why quinoa is gluten-free. You can even eat the leaves!
- There are roughly 120 known varieties of quinoa, according to the Whole Grains Council. The most commercialised types are white, red and black quinoa. White quinoa is the most widely available in stores. Red quinoa is more often used in meals like salads since it tends to hold its shape better after cooking. Black quinoa has an “earthier and sweeter” taste. You can also find quinoa flakes and flour.
This gluten-free chocolate cake in a mug is perfect for a quick chocolate fix when a square of dark chocolate just doesn’t cut it. It only takes two minutes in the microwave, and it comes out warm and decadent, but with a touch of airiness.
Not only do we love cooking with quinoa, we love smokey flavours! Lately, we have been using our best propane smoker to create smoked aubergines with chilli lime yoghurt. Keep an eye out for this recipe coming soon!
However, my one of my favourite parts of this quinoa chocolate cake is that there are no leftovers to tempt you at 2 am. And duh, this version’s healthy!
So what it boils down to, is you’ve got yourself a crazy convenient breakfast/dessert that is 200% nutritious and scrumtrelescent.

Chocolate Quinoa Mug Cake

- 2tbsp cooked quinoa
- 1tbsp chia seed
- 30grams protein powder or cocoa powderor half of both to equals 30 grams
- 1/2 banana
- 1 egg
- 1/4 tsp Optional vanilla
- 1 tbsp Optional honey to make it sweeter
- Drizzle with dark chocolate sauce
- unsweetened cocoa powder to sprinkle on top
- Mash your banana. Then add all ingredients to a large microwave safe mug. Mix thoroughly until batter is formed
- Microwave for 30 seconds. Wait 10 seconds, then microwave again for 15 seconds. wait one more time and then microwave for an addition 10-15 seconds or until cake starts to expand past mug.
- Remove from oven and gently flip mug over onto a plate. Cake will have form. Drizzle will any additional chocolate sauce, honey, cocoa, etc. of your choice! Enjoy!

You definitely can! I have never done it that why however, I am too impatience 🙂 Let me know how you go!

I have tried with a large cake, I put the oven on 180 Celsius for baked for 30 minutes. If you wanted to still do it mug sized in the oven, I would try 10-12 minutes. Let me know how you go! I would love to try that size in the oven.
